The Edge

Getting Involved

Recently Byran offered his time to work with students from the Rivers Alternative Middle School in Warren Maine with their cooking min-course. Rivers school is a small experiential based learning environment for 7th and 8th graders from MSAD#40.

After a brief tour of the restaurant the students learned a little about what it takes to prep for a dinner service. They scooped some corn bread mix, kneaded some sourdough flat bread, helped mix the sugar cookies and cupcakes and even did a few dishes. Once the hard work was done they moved on to making their own thin crust pizza. But of course, they did Edge style; in the wood fired, brick oven.

With a fresh crust placed on a floured paddle, the students loaded up the fresh mozzarella, tomato sauce, local greenhouse tomatoes and shredded mozzarella. A few of them even threw a pepperoni or two on there. If you ask them, the pizza was the best part, but I’m sure they enjoyed the other stuff as well.

It was a great experience for the students and a great opportunity for the Edge to get involved with the local community. And who knows, we may have had a great future chef in our midst.
